Beetroot soup with horseradish
This beetroot soup has a delicious earthy taste and in combination with the spicy horseradish it is delicious. Don't like horseradish? Then you use a little crème fraiche in the soup, which is also delicious.

- 500 g beetroots (cooked)
- 2 shallots
- 2 leaves of laurel
- 1 clove of garlic
- 750 ml vegetable stock
- 100 ml creme fraiche
- 2 tablespoons grated horseradish
- olive oil, salt, pepper
Saute the finely chopped shallots in a dash of olive oil. After a few minutes, add the grated garlic and stir well.
Now add the diced beetroot and stir well. Then add the vegetable stock and bring to the boil. Let it boil for 10 minutes.
Blend the soup in a blender until the soup is completely fine. If it is still too thick, you can add some vegetable stock or water until it is to your liking.
Mix the crème frache with the horseradish. Taste and add more horseradish if desired.
Ladle the soup and make a nice quenelle of the horseradish cream.
