Spicy eggplant in tomato sauce
A delicious spicy sauce that we ate for the first time in Turkey, a long time ago. It was a long time ago now, but glad we dusted off the recipe again. Delicious with Turkish bread and a fresh salad.

- 1 eggplant
- 2 tbsp tomato paste
- 2 cloves of garlic (optional)
- 1 Chilli (if you don't like very spicy, remove the seeds)
- 400 ml canned tomato pieces or fresh mashed tomatoes
- 1 handful flat-leaf parsley
- olive oil, pepper, salt
Eggplant
Preheat the oven to 200 degrees.
Cut the eggplant into cubes, add 2 tablespoons of olive oil and mix well.
Bake the eggplant in the oven for about 20 minutes.
Eggplant in tomato sauce
Saute the garlic and chilli in a dash of olive oil.
Add the tomato paste and cook for a few minutes, stirring continuously. The tomato paste will now be very sweet.
Add the diced tomatoes and the cooked eggplant.
Let it boil for 5 minutes. Season with salt and pepper. Garnish with a handful of finely chopped flat-leaf parsley.
